Digestive & Carminative
Aromatic seeds, fiery rhizomes, and earthy taproots traditionally enjoyed before or after meals to awaken the palate.
Digestive bitters (sesquiterpene lactones like taraxacin in dandelion) bind to bitter taste receptors (TAS2Rs) on the tongue and throughout the GI tract, stimulating vagal nerve signaling that increases saliva, gastric acid, digestive enzymes, and bile flow. Carminatives (fennel, cardamom, ginger) relax visceral smooth muscle spasm.
Roots (Dandelion, Burdock, Ginger, Turmeric, Licorice) are simmered for 15–20 minutes; aromatic seeds (Fennel, Cardamom, Star Anise) are crushed in a mortar just before a 10-minute covered steep.
Either earthy-bitter (roasting turns them mocha-rich) or sweet-spicy-pungent (fennel, ginger, cardamom).
